Microwave Carrot and Walnut Cake

1/2 cup melted butter
2 carrots, grated
1 cup crushed walnuts
1/2 cup sugar or honey
2 cups wholemeal flour
2 tsp baking powder
2 eggs
4 tbsp milk (or milk alternative)
1/2 cup almond meal

This mix can be made in a microwave rice-cooking container (without the lid), a microwave dish or a microwave-safe bowl. I made the mix straight into the dish I was cooking it in. I hate dishes!

Mix melted butter, eggs, sugar and milk thoroughly. Airate it by whisking with a fork for 3 minutes. The more airated, the more it will rise later.

Add baking powder and flour. Start with adding 1 cup of flour, then add the rest based on desired consistency.

Whip with fork for another 3 minutes to ensure ingredients are well-mixed and you are happy with the consistency of the batter.

Sprinkle almond meal on the top, which will give the base a little extra crunch.

Set microwave to medium, cooking the cake for 8-10 minutes. If unsure, stop the microwave and use a knife to test if it's cooked. As it gets closer to being cooked, you will see it moving away from the edge of the dish or container.

Turn out while warm.
